King Peter Ham
A "proscuitto style" ham, absolutely delicious. This is a recipe that one of their founders, Tom, developed in memory of his late father, Peter, who adored air-dried hams of all styles. Tom has taken elements from many of these hams to create a genuinely unique product that shows off the attributes of the pork while enhancing it with a blend of black pepper, juniper and gentle chestnut wood smoke. It is cured for 2.5 weeks, cold smoked for 18hrs over chestnut wood and then aged for 8 months. Sweet and nutty with a hint of smoke, resulting in an incredible depth of flavour.
Tempus prepare the loin in a slightly different way than some and leave a generous fat cap on – a genuine embodiment of ‘fat means flavour’. As a more delicate cut of pork, the spices selected are less robust than for some of the other cuts. They use a mixture including mace, star anise and black pepper. The fat adds a buttery texture and profile that stays with you and develops with each additional slice.
Achari Spiced Salami
The spice mix for this salami is based on an Indian recipe for pickling going back hundreds of years. This is combined with traditional methods for fermenting, and ageing which come together to create a genuinely unique, contemporary product. A delicate blend including fennel seed, Talicherry black pepper and fenugreek give this salami a complex yet subtle flavour.
The coppa, or pork collar, is a cut synonymous with charcuterie the world over. Characterised by its natural golden ratio of lean muscle to fat (around 70:30) it has a deep, rich flavour and a wonderful texture. They add to this incredible cut a delicate blend of carefully sourced whole spices that they grind and blend in-house, including cardamom, cloves and cinnamon.
The name Tempus has become synonymous with the the finest charcuterie in the UK since its inception in 2017. Founded by Masterchef winner Dhruv Baker and Tom Whitaker, they have won multiple awards for their fantastic range of British Charcuterie.

At Tempus we only use ex-breeding sows and ex-dairy beef in our charcuterie, which in the case of the pigs means animals that are in excess of 4 years old and weigh more than 180kg, as they deliver marbling, fat ratios and intensity of flavour that simply cannot be matched by younger and smaller animals.
This ethos is also part of our commitment to utilising the food-chain correctly. We have a responsibility to use animals already in existence as these, often overlooked animals are truly special. They should be treated with the respect reverence they deserve. In this instance, old is indeed better.
At our purpose-built facility in Weybridge, we butcher, cure, ferment and age our products, finishing them for up to a year in our custom-built ageing room where the natural moulds have been allowed to colonise. Alongside our technical know-how is our obsessive exploration of flavour through our understanding of spices which together have led to our unique and multi-award winning range of exceptional British Charcuterie."

- Currently we deliver to mainland UK including England, Scotland and Wales. Please note, we do not currently deliver to the Scottish Highlands, Northern Ireland and all the UK Islands, as our courier is unable to offer a next day service to these destinations. - For all orders which include food, DPD cannot arrange for redelivery of a package. If you provide incorrect or inadequate address/contact details and the package cannot be delivered (or left at a suitable location), your order may be cancelled without refund.
DPD will contact you with tracking details and your delivery time slot, as well as giving you the opportunity to give additional delivery instructions, such as where to leave the parcel if you won't be in.
